Thanksgiving series Ep. 1: My viral Thanksgiving Mac n cheese!

Grate all cheeses into a bowl, mix together and set aside at least 1 cup for the top of the mac n cheese for baking. Boil 1 lb macaroni pasta in salt water, cook for about 7 minutes. Drain and add to an oven safe pan. For cheese sauce- add butter to a large sauce pot or pan. Let melt and add flour slowly while whisking until fully combined. Cook for about 2 minutes then add milk + cream SLOWLY while stirring. Sprinkle in 3 cups of grated cheese SLOWLY and mix well on low heat until everything is combined. Once cheese sauce forms color and thickness, add in salt, pepper, paprika, and garlic powder to taste. Add cooked macaroni and mix well. Place half of the macaroni & cheese in a baking dish. Cover with cheese. Pour the remaining half of mac n cheese on top. Cover again with more shredded cheese + 1 cup of bread crumbs + 2 tbsp melted butter. Place in oven on the top rack, bake at 400 for 15 mins then broil (about 2 minutes) until golden brown and toasty. Top with chopped chives. Plate it all up, serve and enjoy!
