Sheet Pan Beef Quesadillas

Preheat oven to 375°F.

In a large skillet over medium heat, heat olive oil. Add ground beef to pan with 1 packet taco seasoning + 1-2 tbsp water. Once cooked for a couple of minutes, add in your chopped onions, bell peppers, and jalapeños. Cook for about 5 minutes, turn heat off and set aside.

On a baking sheet, place 6 tortillas around the edges of the pan. Add 1 in the center as well to cover the whole bottom. Fill in the whole sheet with your ground beef mixture and spread evenly. Top with shredded cheese and chopped cilantro. Place another tortilla or 2 in the center on top of the fillings then fold each tortilla towards the center to close your quesadillas. You basically just want to make sure everything is folded in and covered. Finally, top with a second baking sheet on top of the tortillas so the quesadillas hold its shape.

Bake at 375°F for 25 minutes, then remove the top baking sheet and bake for an additional 10-15 minutes more.

Once finished, let cool for about 5 minutes before slicing into rectangles. Serve with your fav sauce and enjoy!
