This recipe details how to prepare a honey garlic salmon bowl for meal prepping. It includes instructions for a flavorful salmon, a honey gochujang sauce, and suggestions for assembling the bowls with jasmine rice and various vegetables.
1. Cut 4 salmon filets into bite-sized pieces.
2. In a bowl, whisk together 1/3 cup honey, 3 tbsp soy sauce, 2 cloves minced garlic, 1 tsp fresh grated ginger, 1 tbsp rice vinegar, and 1 tsp sesame oil to create the salmon sauce.
3. Pour the sauce over the salmon bites, ensuring they are well coated.
4. Line a baking sheet with tin foil.
5. Arrange the salmon bites on the lined baking sheet.
6. Bake at 400°F for 12–15 minutes.
7. While the salmon bakes, prepare the honey gochujang sauce: Combine 1/4 cup greek yogurt, 2 tbsp honey, 2 tbsp gochujang, 1 tbsp soy sauce, 1 tsp rice vinegar, 1/2 tsp sesame oil, and 1 tbsp water in a cup or bowl. Mix well.
8. Once the salmon is finished baking, divide the cooked salmon into 4 meal prep containers.
9. Add cooked jasmine rice, rainbow carrots, edamame, green onions, cucumber, and avocado to each meal prep container.
10. Drizzle the honey gochujang sauce over the bowls. For storage, you may store the cucumber, avocado, and honey gochujang sauce separately from the meal prep bowls until ready to eat. Enjoy!
