In n Out Smash Tacos

Lay out 4 tortillas and flatten ground beef all the way to the edges of the tortilla. Season with salt and pepper.

Make sure to spread them very thin because they shrink when you cook them.

In a large sauté pan, lay down the taco with the meat side down on medium/high heat for about 6 minutes.

Flip over and let cook for about 2 minutes, then add American cheese.

Cover with a pan to melt completely, then remove from heat.

Top with caramelized onions, lettuce, tomato, pepperoncinis, and In n Out secret sauce.

For In n Out sauce, mix mayo, relish, ketchup, sugar, and white vinegar.

For caramelized onions, in a sauté pan over low heat, add olive oil, diced onion, and 1/4 tsp salt.

Continue mixing and scraping along the sides of the pan until golden brown, then add 1 tbsp of water.

Let fully evaporate and turn up the heat to medium, add another tbsp of water, and continue mixing onions for 10-12 minutes until fully caramelized.
