Homemade Marshmallows

1: Cover the glass dish or small sheet pan with plastic wrap and spray with neutral oil spray.

2: In a small bowl, combine gelatin with 1/2 cup cold water and let sit to bloom.

3: In a small saucepan, add the 2 cups of sugar and the other 1/2 cup of cold water.

4: Turn on heat and let sugar dissolve over medium heat.

5: Once dissolved, turn on high heat, let the mixture boil and add in the gelatin.

6: Let everything come to a boil, then turn back to medium heat until temperature reaches 245 degrees F (about 8-10 minutes).

7: Remove from heat and slowly pour into a stand mixer with the whisk attachment.

8: Mix on low for about 2-3 minutes, then add vanilla extract.

9: Gradually turn the mixer to high for about 8-10 minutes until marshmallow fluff appears and the mixture has expanded in volume.

10: Spray a rubber spatula with neutral oil spray, then scrape along the sides of the bowl to place the marshmallow mixture into the prepared pan.

11: Continue spraying the spatula and spread the marshmallow mixture evenly in the pan.

12: In a small bowl, combine cornstarch and powdered sugar, mix well, and dust the top of the marshmallows with this mixture.

13: Let sit for a minimum of 4 hours to overnight.

14: Once set, cut into desired shapes like squares or festive shapes using cookie cutters.
