Creamy Roasted Tomato Gnocchi Soup

1: Preheat oven to 375°F.

2: Cut tomatoes in half and remove the core.

3: Place tomatoes, garlic, and onion on a baking sheet.

4: Drizzle with olive oil and sprinkle salt and pepper.

5: Bake for 25 minutes.

6: Pour everything from the baking pan into a blender and blend on high until smooth.

7: Pour the mixture from the blender into a large pot.

8: Turn the heat to low and add tomato paste, mixing until fully combined.

9: Add in heavy cream, stock, butter, gnocchi, basil, Italian seasoning, and cubed gouda.

10: Continue simmering on low for 10 minutes, adjusting with salt and pepper to your liking.
