Chuck Roast Tacos

1: Set the Instant Pot to Saute mode.

2: Add olive oil and sear the chuck roast pieces for 2-3 minutes per side until browned. Remove from pot and set aside.

3: Add sliced onions and garlic to the pot and sauté for 2 minutes.

4: Stir in chili powder, cumin, smoked paprika, oregano, and chipotle powder. Cook for 1 minute to toast the spices.

5: Return the chuck roast to the pot.

6: Add beef broth, lime juice, and apple cider vinegar.

7: Secure the lid, set the vent to 'Sealing', and pressure cook on High for 45 minutes.

8: Allow a natural pressure release for 15 minutes, then quick release the remaining pressure.

9: Remove the beef, shred it with two forks, and season it with salt.

10: Reserve the cooking liquid for dipping.

11: Char tortillas over an open flame.

12: Fill tortillas with beef, chopped onions, cilantro, cotija cheese, avocado, and Tapatio or other hot sauce.
